I know it's a lot of work but I would remove the head and strip it.
Replace all damaged parts clean and grind in all valves then set up the valve clearences it's much easier with the head off.

Not having to change gear all the time is the other my K1300S...

I would try an easy out if you have one big enough and go slowly.

The AC indication you read on a small DVM is not going to be accurate as they are optimised for a correct RMS value at 50/60 Hz all you get is an indication that it is working which should be good...

I don't remember how good the brakes on the Ninja were but on the BMW if you grab a big hand full of brake when lent over it will high side you that's if you have enough grip if not the front tucks...
