update...

Drained the oil and spun the filter off. As soon as I got the filter off, I realized what the problem probably was because I found that the filter grommet was jammed against the union Bolt causing it...

You are correct that the oil preasure will be higher with a higher base weight oil. However, flow is quicker with lower weight oil especially at startup and in cold temps.

Don't fear the oil change. Its straight forward. However, this issue is legit. Haven't had this issue until 10K and it keeps reoccuring. Experimenting right now to find the problem.
