Sometimes if carbs are all known good, erratic idle, especially if changes with hot/cold engine, can be indicative of a valve adjustment issue too ....
sounds like your carbs need thorough makeover...

I've also used thick plastic or pieces of old fairing to do same project and color matched it to bike...

I literally just went through this !!! drove me...

I literally just went through this !!! drove me nuts til I figured it out.... probly pulled them and set floats 10x, replaced bowl gaskets, etc. Ended up just putting new O-rings on the bowl rail...

Also fabbed up a muffler bracket out of some aluminum plate. Just painted it satin black for now I think it should work OK it bolted right onto the relocated stock rear passenger peg mount

So after a few months off the project.... Finally got back to it. I got the battery box fabbed up —had to move a few more electronics further up under the seat Which actually turned out better...
