Camping all those days would be extremely uncomfortable due to the limited space. You won't have room to bring much with you. Unless you plan to go Man Vs Wild, I would stay in a motel.

Sorry to hear that. The 250 is not that hard for a woman to handle. But if she is not comfortable with motorcycles, there is not much you can do to convince her to ride....
