You may have vaccum leak between throttle-body and engine.
Connect vacuum-gauge to each sync port on throttle bodies and measure vacuum at idle with warmed up engine....

Yeah, that guide is good. Loosen all the clamps so there's no twists anywhere.

Also using string strung around front & rear tyres is good way to make sure they're both aiming in same plane.

Yup, speedo is very easy to calibrate. Be sure to do roll-out measurement with your weight on seat. Also take time to get sensor lined up with magnet within 1mm or so.

The broken tip can be pressed in from carb venturi side.
There may be anodic corrosion from dissimilar metals touching.
An ammonia-based cleaner can dissolve this corrosion and free up tip.
