Maybe that's what you should work on first then. Getting her to let you ride off road on dirtbikes and atv's and she might slowly accept that riding is ok. Then slowly progress toward street.
As I said, I've ridden offroad for many years, so my mom (though never actually watching me in all those years) knew and understood that I was fine on a bike. Her fear was other drivers. She knows multiple people who have been killed on bikes by drunk drivers and people not looking, etc.
I still don't think you should go behind her back, it just isn't going to end well. And when you do get in an accident (almost everyone does as some point), then what? Not that it's something nice to think about, but it does happen.
