Because they're fun. They're worry-free, riding that includes no oncoming traffic, no gravel, no grass clippings, no animals crossing the road. On top of all that lovely riding bliss, you get instruction and as a nifty side effect, you get more skill for the street to deal with surprises like decreasing radius turns or any of the above listed things that plague us all on street rides.

Because it's fun to go fast and turn hard and brake hard and throw the bike around without a worry about anything external to you or the motorcycle. Everything else is just a perk.
