The videos give the impression it's pretty easy. I'd love to try one, but I'm not sure I'll decide to drop the money while the revzilla closeout is going on, and I definitely don't plan to try it out at full price.

Look up Charlieplexing. I had no problem running 20 individual LEDs from a 5 port board. You really shouldn't need two for this project. I'd also suggest you buy the ebay non-branded/knockoff boards. The actual ICs on the board are the same, they work (in my experience and many others), and they're massively cheaper - like a couple bucks per board.
