If the shop is really capable of doing the work they shouldn't need you to find the parts for them.
It is going to be cheaper and easier to just buy a 500 or 600 than to do the engine swap, but bike projects aren't always about what is cheap or easy.
Make sure you post pictures of the project. Have fun.
