Technically, a traditional choke uses a "choke valve" which is a sliding perforated tube used to throttle the air intake (not gas) at low velocities, while butterfly valves are traditionally used to choke off the airflow at higher throttle openings. The symbol for a choke circuit is the butterfly valve, and this has been extended to use on enricher circuits, and even to idle speed adjustment on fuel injected bikes by Ducati. If any of that makes sense to you, remember that applying full throttle technically means completely restricting the intake and stalling the engine.
