Are you keeping the throttle pinned while you shift? It's very possible to accelerate hard to 60 without picking the front wheel up. If you're picking the front wheel up between gears, you're doing it wrong.

See my 0-60 thread for plenty of hard 0-60 runs that don't pick the front wheel up.
