I see a few potential issues here...

You'll need to seal the perimeter of the gel pad to the foam or you risk water buildup under/around the gel. That can cause mildew (stink) and that horrible squishy sound you get when your shoes are wet.

Depending on the gels thickness in comparison to the seat foam, you may have a difficult time removing the proper depth of material from the seat evenly (cutting up foam sounds easy but it's a PITA.)

I would either recommend an upholstery shop to do the install or go with an aftermarket seat.

Sometimes the cheaper route isn't a better route.
