I'm hoping there's an aspect of functionality as well as looks. My end cap started rusting because of the high humidity, so hopefully a plastic coating would help prevent the rusting.
I really like the way my (black) rear sets clean up the bike so I may do the same with the passenger pegs and use one of those plasti dip gloss coat.
