You can use any trackday tire in a 160/60/17, as they all measure 170.
When you change tires, any change in diameter will change the bike's geometery. The large rear tire will bring the rear of the bike up and change the rake slightly if you keep the same front. This will reduce the amount of trail, lowering the fork also reduce the trail.
