Hay Jim do you think a dimmer switch could control a small AC motor ?
last I saw guys were using dimmer switches to control the speed of motors but those motors were DC not AC.....
well sense the dimmer switch is AC and the motor is AC there shouldn't be a problem except for maybe the amperage draw.... dimmer switches can not handle much in the way of Amps...that much is certain ! but I think one might be able to control the exhaust fan so it would control the burn rate...
that might be the easiest route to take... just put in a dimmer switch on the exhaust fan and get the burn rate set just right.

( this stoves burn rate has never been the best in the world I played with the adjustment many times and I could not get the blue flames your supposed to get ! )
.....
