Easiest would be 4.5" ER6N (Ninja 650) rear wheel. Has benefit of looking exactly like 300 wheel. Don't know about sprocket offset, but on 250, a 160 tyre would just barely rub on straight chain with aligned sprockets. Will probably need to make custom spacers and centre wheel in swingarm.

I recall reading somewhere about CR250 swap, they had to mount engine slightly left of centre to line up sprocket.
