I believe you can, however you have to look at all of the other factors like handle bar clearance etc. since you have to swap the whole thing over. Everything from the triple trees on down.
Do a search for pregen 17" wheel conversions. Many people talk about swapping new model forks onto the older model (pre '08) bikes to take advantage of the modern tires available in 17" sizes. You are essentially doing the opposite so many of the issues will be covered.
