Could you just buy the bottom part of a right fork that has the mounting already on it for the right side and slap it on the left hand side then just use a bracket and do what you have to do to make it all work/line up/correct clearance ect...?

That's what I would try for the fork/mounting issue but as far as a rim to mount another rotor on the left side IDK. I have seen it done. Saw no reason to do it other than looks if it tickles your fancy so I never looked much further into it. Might be easiest to get a different wheel like rojo did that already has dual rotor capabilities
