@"Jonathan" chicken

put some flour, some bread crumbs, garlic, a bit of ginger some salt and peper and a bit of paprika together in a bowl. wash and trim a lean chicken breast. dice the chicken breast into inch cubes. coat the cubes in the flour mix. fry them on med-high where the oil is bubbling a bit (375F they tell me). turn the pieces as they brown until they are evenly browned on all sides. test a piece by cutting it down the middle to make sure you're not crazy somehow. put the chicken on some paper towels off to the side. turn the heat to low, get rid of most of the oil. throw in a good amount of soy sauce, lots of garlic, some ginger, cayanne to taste, maybe a few slivers of onion, lots of sugar, a few peppers if you have them. if you want to make it "orange" chicken, throw in orange squeezed juice and some orange shavings from a nice clean orange. stir it all up. mix some corn starch or flour into some water. now take the sauce off the heat for a minute while you add the flour water. mix vigorously and then put it back on the heat and keep mixing until it reduces into a nice thick sauce. put the chicken back in and turn the heat up just a bit while you mix everything around until the chicken is fully coated. then remove the chicken (nobody likes eating a big pepper or orange so i remove that crap and leave just the sauced chicken) you can add vinegar and honey to the sauce to make it taste more like the kind of orange chicken you would get at panda express

takes about 10 minutes to prep, around 30 minutes to cook
