easy Cream Cheese Pastries

2 packages pillsbury croissants

1 cheesecake mix (you won't need the graham cracker crust)

your choice of pie filling or fruit filling, if desired

your choice of frosting or icing, if desired

Using a rolling pin, or your hands, flatten out 1 package of the croissant dough and lay it on a cookie sheet. Make up the cheesecake mix as directed on the package, and spread it over the croissant dough, making sure to leave a little room around the edges, also add any filling you're using at this time. Now flatten out the other package of croissant dough and lay it on top, pressing the edges together. Bake as directed on the dough package, although you may want to let it bake just a bit longer to ensure everything is evenly done. Let cool for about 10 minutes, then top with frosting or icing , if desired. Cut up into desired number of pastries and package accordingly.

I use Ziploc bags, and either freeze or refrigerate these. Happy new year all!
