A friend of mine came up with this, and it's really good! The prep work's a bit complicated for just breakfast, but these are worth it!

"Loaded" Pancakes


2 cups prepared pancake mix
(if you make yours from scratch, more power to you, but I'm lazy when it comes to pancakes)

1/2 cup cooked instant oatmeal
(I use a little extra water to slightly thin it out a bit)

2 to 3 strips bacon, cooked and diced

1 to 2 breakfast sausage links, cooked and diced



Mix the oatmeal with the pancake mix and pour into your skillet or griddle. Add in some of the bacon and sausage, then flip it. Serve with your desired topping.

These are awesome, and if you want to save a little time, you can cook the bacon and sausage the day before and refrigerate it. The oatmeal gives them a little more substance so they stick with you a little longer, and the meats, besides being delicious() are a great addition and help make these even more filling.
