No idea when any of the fluids were last changed as the bike is new to me, based on the little i do know about it i can guess its been a while, i do know it sat for a long time without running as the prior owner had it apart to do a cafe build
I attached a couple pictures of the water pump seal on the back, it looks fine to me, i don't have a compression tester so i'll have to run out and get one soon but it runs well on both cylinders with no smoke or anything, but i'll do a compression test soon anyway
