Rather than vent the tank externally I'd like to keep and relocate the evap system between the tank & carbs.
My question is, can the canister and separator be mounted sideways?
As I understand, the system it strictly vents vapors so it shouldn't rely on gravity, right?

it should be fine mounted sideways. and you should also be fine removing it all. the system is in place to help prevent fuel vapor emissions from venting into the atmosphere. i wouldn't worry about possible fuel vapor in shop with gas water heater. i store four bikes in my shop and can barely detect any fuel smell
