Racers drag because they are trying to carry the most speed through a turn. To do that you want as little lean angle on the bike while still turning. You get to the inside of the bike and hang off, it pulls the bike that direction allowing more speed till you touch the ground before the bike.

There is no reason to want to drag your knee. If you want speed through a turn fine but do it at a track because you clearly are not experienced enough to control the bike and are going to get hurt. . . and apparently you are going to do it where no one is around to call you an ambulance.
To add to this, something I noticed in my last two races.

The faster I go, the less my knee touches. Matter of fact, my fastest race on the day, my knee never touched asphalt.
