I've actually started my bike in 6th gear before, well, a few times. I was just testing the bike out, seeing what I could do.
It's just like starting in first, but you let the clutch out for about 3 seconds and rev it to about 9 grand and eventually let it fall to about 5k RPM. Then no clutch. Ezpz, I did it with someone on the back, too.

Yeah, I'm thorough on my bike tests.
