In general, the problem with too much oil isn't excess oil pressure, it's that if the level is so high that the crankshaft starts hitting it you get a lot of foaming, so the pump picks up an air/oil mix, which doesn't work as well as just oil. Also, there's a huge amount of oil mist in the crankcase when that happens, and normal blowby carries the mist out the breather and makes a mess.
Of course other odd things can happen that are specific to particular engines and various ways crankcases are vented.
