It appears fan should be powered as follows from factory:

- black/yellow grounded full-time.
- black wire provides power from fan-switch
- black wire power to fan-switch gets power from 10a cooling-fan fuse
- 10a cooling fan fuse powered by white wire from starter solenoid

Now, this white wire has power full-time regardless of key position. So fan will run to cool off engine even after you’ve turned off ignition-switch and removed key.

In your case, it appears fan is hardwired to be on whenever key is on, thus bypassing fan thermoswitch in radiator completely.

1. Trace black wire coming out of fan-connector and see where it ends up to get switched power.

2. Trace black wire from fusebox that should be going to fan thermoswitch. Perhaps it will lead to proper fan thermoswitch connector. Other black wire on that connector should go to fan.

Looks like that loose connector you showed earlier with black/yellow+black wires should be plugged into fan. Which brings up question: What’s plugged into fan now???
