The main jets are clear, but there are small passages in the carb that meter the air and control the idle jet that basically runs the bike below 4 or 5k rpm. If those are still blocked, it will fall on its face when you try and run it. The only other thing to check are the diaphragms and the needles to make sure they are in right. If they are catching or stuck, it would also choke it off.
Bad news is, I think you are going to have to pull the carbs out again.
I found that running cleaner through all the small passages, and ultrasonic cleaning in vinegar and degreaser mix worked really well. I also always replace the screws on the bowls with hex head screws in SS to make sure they come off again later.
I mostly find old filter material in the small passages in the intake part of the carb cause the problems. Old filters get dry, some one fires up the bike, and it crumbles into the carbs.
