Hi Tommy and welcome to Ninjette!
Issue with hybrid configuration is you will have non-optimal fuel & ignition-maps using 300 engine with 250 carbs and igniter. You'll need to get wide-band O2-sensor to rough-tune AFR as close as possible by juggling jets. Then finish up on dyno to fine-tune AFR and ignition-maps. You'll also need to install some sort of programmable ignition box on 250 harness.
Also not possible to split 300's fuel and ignition functions. The 300's flywheel and crank sensors are required by 300 ECU to control both fuel and ignition. 250's ignitor won''t work with 300's flywheel & triggers and 300 won't work with 250's.
Best to get complete OEM set-up:
- 300 engine
- 300 air-box + IAT-sensor
- 300 tank w/fuel-pump
- 300 throttle bodies w/injectors+TPS+MAP-sensor
- 300 harness
- 300 ECU
- 300 exhaust
Then it's simple plug & play swap that can be done in 1-day. Pick 2 of 3, but you can't have all three:
1. low-cost
2. powerful
3. reliable & durable
