Riding to AZ is quite doable on the Ninja. A set of soft luggage--saddle bags, tank bag, and tail bag would hold anything you need. The rest of the stuff you need can always be shipped. You should also invest in a good MC Cover. AZ sun is quite intense. As for the route, check with Adventure Cycling Assn. for bicycle maps from NY to AZ. If the route is good for a bicycle, it is great for a motorcycle. I tour with my 250 and use bicycle maps exclusively. Interstates, at least for me, are a totally boring experience.
