sprockets

I want to add like 1-2 teeth to my front sprocket but idk how much it will affect my speedometer and odometer

It won't affect either at all. The Ninja 250 runs the speedo/odo off of a cable connected to the front wheel, unlike most other bikes (including the Ninja 300).

ok so what the best combo for 75 mph will lower rpms because im usually like 75-80 at 12k rpm and I would like them to be lower

if you go like 15t front / 42t rear you should be around 8k at 80 mph

I have the stock gearing and I think the bike is at 10,000RPM at 80 indicated in 6th gear. Still pretty bad though.

Aren't you supposed to replace the chain and sprockets together though to avoid premature wear?

With the 15t front and 42t rear its calculated 77 mph at 8,500 rpm in 6th gear

It's never going to have the torque of a 500 or 600. You'll need to tweak it to get it to perform better and learn how to ride it to get the most out of it. If you are wanting to do more freeway riding there will be a small trade off, but nothing drastic.
