Harris Hill in San Marcos would be the closest for you. Bike days are usually 1st Saturday and 3rd Sunday of the Month, plus every Monday. It's $150 for the day if you're not a member. If you want to go sometime then just give me a shout and I'll get you an invite. There are several of us running 250's and 300's out there now, so you'll have some company

EDIT: Plus there is always COTA, but you might want something bigger than a 250/300 for that track. I'll be there September 12th on my GSXR -750, if anyone else from here goes, stop by and say Hi, I will be in the Ducati San Antonio garage.

I wouldn't ride cota either unless the price was lowered

$500 a day is what I've heard

I can get two weekends out of that! Though it does have a similar appeal to laguna seca in that it's a proper world class track
