Engine braking and other question

I forgot how to engine brake I know you pull clutch in shift down pull clutch out. but do you give it constant throttle or kill the throttle or what?

Another question when im about to stop i slow down and start breaking and going down my hears, if the light turns green and im in first. i start releasing the clutch and going but it suputters till i give it more throttle was up with that?
