Bike died while on freeway, don't know why
I had done about 100 miles with a group before getting some lunch. After taking back off, I was traveling down the 8 at about 9k rpms and somewhere near 80-85mph and I lost all power. There was no engine braking occurring, and the throttle wouldn't work. I was adjusting the vents on my helmet, could it have been that I somehow hit the engine cut off switch accidentally? I ended up pulling over, turned the ignition off and back on and the bike worked fine.

That sounds like how it would behave if you had hit the kill switch, but did you notice that it was turned off when you were stopped at the side of the road?

I hadn't payed attention to the switch, I bet I did hit it somehow though, because the bike has never had a problem

If it was going along just fine and it suddenly lost all power and coasted to a stop, that points to electrical rather than fuel issues. If it immediately started without you doing anything (opening the gas cap, or anything else), seems like an electrical issue that was also fixed immediately, which points to either the kill switch or the ignition switch.
