oil temp vs coolant temp
Which of the two is more important in regards to our motor? I flog my motor and keep the revs relatively high for extended periods of time (it's pinned for a long time). Would the coolant temp be a good indicator of oil temp?

they are both important.
if was forced to pick one gauge over the other i would probably pick the water gauge. with an idiot light oil temp set at 250f

setup a two way flop trigger to send whichever the lower resistance (higher heat) of the two thermistors is used.

They are both important, but to answer your question and to add a suggestion, I would be more concerned about oil pressure over oil temperature.
Here's how I would rank importance from first to last IMO: Oil pressure Water/Coolant temperature Oil Temperature

why not just get one of those fancy gauges that has trigger zones so you can set it to monitor all of them and only tell you something is wrong when its outside the normal zone

I rigged up an oil pressure gauge for my Bonneville. If interested I can show you the DIY thread I posted on TriumphRAT and NewBonnevilleriders. It should give you an idea of how to route the stainless steel line and what not.
So far I am just relying on my oil pressure light that is part of my Trailtech gauge
