Cooking is def. one of my passions. Lets see tonight I made grilled spaghetti with steamed meatballs with a bbq tomato sauce. Very tasty but tomorrow I gotta hit the gym nice and hard...the sauce alone had 1 pound of smoked applewood bacon in it...and yes I smoked it myself. You would be amazed how many of my neighbors I have met at my school from just people walking down my street and smell me cooking dinner. Guess what I cook is better than their ramen I find the key to cooking is using as much fresh ingredients as you can. I think I'm the only kid at Rutgers who grows his own rosemary,basil,sage,parsley, and cilantro. And no I'm not a dork I just love food

Hey - can I help it if the system didn't want to upload my pictures last night.

Here you go food critics.

First saute some onion and garlic in olive oil, add a few spices.


Add a large can of plum tomatoes, cup of clam juice, and some white wine and simmer. The longer the better but 30 min will do if you're in a hurry.


Have your fish ready to go.


While the crab is in the pot, add the halibut first, then the shrimp, and and the very end the scallops. I cut the crab up after it was cooked and added to the rest to get the flavor in.


When the rest is ready plate up and enjoy.

well, we have shrimp and prawns. prawns are kind of between shrimp and crayfish (crawfish).

oh, the wikipedia says that you guys call them yabby or koura

i never ate crayfish before, but i used to have them and prawns in my aquarium when i was a kid. used to be cool when they would catch the fish in the tank.

An artichoke? How did you have it?

For dinner, I had rice with pan-fried fish, and tomato and fish broth/soup. Dipped the both the fish into some Vietnamese fish sauce thingo.

No pictures I’m afraid as I don’t cook this very often just when we have guests that like Indian

Not exactly Indian but from Sri Lanka



My ultimate curry dinner for 8 to 10

Beef Curry
1kg beef cut into 1 inch cubes
2 or 3 large onions chopped
2 Tomatoes chopped
2 Pods of garlic chopped
A small slice of raw ginger
A few cardamoms
A few cloves
1 teaspoon of chilly powder more if you like it hot
1 ½ teaspoons of curry powder
½ teaspoon of saffron or turmeric
1 inch piece of cinnamon
salt to taste

Method
Put two tablespoons of oil into a pan with the onions and cook until brown
Mix all other ingredients with the meat and add to the pan cook until there is just a little liquid if the meat is still hard add a cup of milk and simmer until soft


Chicken Curry
8 to 10 chicken legs top half with skin removed
Two medium onions chopped
2 cloves of garlic chopped
2 slices of green ginger
1 inch stick of cinnamon
2 cloves
2 cardamoms
1 teaspoon of chilly powder
½ teaspoon of saffron
1 teaspoon of curry powder
1 teaspoon of salt
1 tablespoon of tomato sauce if you don’t like tomato sauce two tomatoes chopped
1 bay leaf

Method
Mix all ingredients into the chicken and leave aside for 15 mins ( except the onion garlic and ginger )
Heat 1 tablespoon of oil in a pan when hot add the onions garlic and ginger cook until slightly brown.
Add the chicken mixture and lower the heat cook covered until chicken is tender add a little milk as needed








Fish Curry
One tin of pilchards
1 Large onion chopped
1 green chilly
1 teaspoon of chilly powder
½ teaspoon of turmeric
1 teaspoon curry powder
½ inch stick of cinnamon
1 pod of garlic chopped
1 tomato chopped
salt to taste

Method
Mix all ingredients except the fish into a pan with ½ a cup of water
Cook slowly until the onions are soft
Add ½ a cup of milk and stair well
Add the fish and simmer for a few minuets


Onion Curry
Two large onions coarsely chopped
1 teaspoon of chilly powder
½ a teaspoon of turmeric
½ a teaspoon of curry powder
½ inch stick of cinnamon
1 green chilly chopped
1 tomato chopped
1 bay leaf
salt to taste

Method
Heat a tablespoon of oil and add all the mixed ingreadients lower the heat after 5 minuets staring all the time simmer until the onions are cooked



Dhal
1 ½ cups of red lentils
2 or 3 large onion chopped
1 or 2 green chillies chopped
2 pods of garlic
1 inch stick of cinnamon
½ teaspoon of turmeric
salt to taste

Method
Wash lentils a couple of times add all the ingredients to 2 cups of water and cook until lentils are well done add water if necessary add a little cream mix well for a few minuets

Aubergine Curry
1kg aubergines
4 large onions chopped
3 pods of garlic chopped
A slice of raw ginger chopped
1 tablespoon of mustard
3 or 4 green chillies chopped
1 teaspoon of chilly powder
½ teaspoon of turmeric
1 inch stick of cinnamon
salt to taste

Method
Cut aubergines lengthwise into slices deep fry in oil until slightly golden brown , drain and leave on kitchen towel .
Mix all other ingredients in a cupful of milk and allow to simmer until onions are soft
Add the fried aubergines and simmer for a few minuets add milk if necessary but should be quite dry when finished



Sundal ( Chickpea )
1 cup full of chickpeas soaked over night
1 onion chopped
1 green chilly chopped
1 teaspoon of mustard
1 teaspoon of chilly powder
Salt

Method

Boil chickpeas till soft
Drain and fry in butter with the onion and green chilly after a few minuets add the other ingredients should be dry when finished.

Rice

The rest is up to you

Today for lunch I had sticky, BBQ marinated mini chicken drumsticks with rice, topped with a little bit of sweet chilli sauce. Good stuff

Tonight I had Ramen with some salmon mixed in.

Cheap and tasty with some good brain food in there as well.

I like to use random leftovers and toss them in ramen soup.

for dinner, some pork, mustard cabbage and shitake mushroom soup... with a salmon fillet seasoned with salt, pepper and lemon juice, pan fried in butter and olive oil



w/ some ice cream a little later for dessert.

spicy korean ramen noodles with green onions, mushrooms, and eggs.

Black Tie Mousse Cake for dessert. I made this cake. So amazingly delicious. It takes awhile to make, but it is so worth it! It's like biting into a piece of heaven. Yummy!

It has a cake bottom, then custard, then mousse, then a dark chocolate ganache, with white chocolate rippled across.

We had our Easter dinner tonight, because we're going to see family tomorrow.

We had grilled Kielbasa with hard boiled (colored) eggs, rye bread, horseradish and mustard. I used to have it when I lived in PA years ago and just felt like making it. It was so yummy!!!!
