Thermostat issues

Hey guys, so when I got my 07 I noticed it never warmed up, but sitting in traffic itd creep up then drop when i got moving. This screamed thermostat to me so I got a new one, put it in with the spring side down, and I still have the same issue. The diagram of the cooling system states I put it in right, so is it possible I got a defective thermostat or am I missing something? Thanks in advance

You should be able to test it, using a pot of water on the stove, and a thermometer.

The primitive system in our 250s results in a fluctuating temperature. Some 250 owners like the Thermo-Bob system, which creates a bypass setup like cars have. But the stock system should allow the engine to warm up to the thermostat's set temperature.

Does it overheat? Mine definitely fluctuates, but only gets fully hot when I'm really thrashing it. So long as the coolant doesn't boil out I just roll with it.

When you say it doesn't warm up what is the temp gauge showing? Ambient air takes in account of warm up temps as well
