Running rich?

After doing forum research I think my bike is running rich. However, it doesn't seem quite right, it's like a mix of too rich or too lean? I've listed symptoms as well as I can.

Has to have almost max choke on to start: lean?

Smells really gassy at idle with choke off: rich?

Engine dies unless RPMs kept above 3.5k for the first 5 minutes of riding: normal?

RPMs drop to almost nothing, then slowly drift up to 1200: rich?

Engine bogs below 5.5k until very warmed up, with and without choke: rich?

Really poor gas mileage, partially from choke duration: rich?

Runs way better when warm: lean?

Can take almost full throttle within 10s of starting, with no choke: rich?

Sometimes stalls after getting off freeway from a 10m ride: rich?

What steps do I take to confirm or fix the problem?

I think looking at the spark plugs is the simplest?

Ah, my bike did sit for about a month while I looked for a new engine. Seafoam is in my immediate future I think. Totally forgot about carbs.

Stock everything except cosmetic.

Also consider Star Tron fuel treatment. Be sure to increase your idle speed as well if the outside temps have dropped.
