94 ex250 playing with exhausts

Hey guys, I've got a 94 ninja ex250 (obviously where I'm posting). I've had this thing for a decade and now have its big brother 94 zx600. I've done a lot of different exhaust setups over the years. This last set up has me bothered, the only thing different from the all the others is I now have velocity stacks. I've gone all the way up to 142 jets (same as my 600 aftermarket exhaust jets). It still feels super lean at 7-8k cruising. It gets the lean buck buy when you nail it, feels good. Spark plugs are new and looks like normal over pattern. So my question is, does velocity stacks make that big of a problem for them. Right now the jets/shim set up is: pilot 40, 2.5 turns mixture, 3 shims and mains are 135. This has got me closer to normal riding. The exhaust is a kustom y I made years ago but ran a smaller mid pipe. I recently upped to a stock zx6 mid pipe and a can I've ran for 5 years. This is just an experiment I'm doing. If anyone's done something similar and had success, I'd love to pick your brain. I love in Tn near the tail of the Dragon and would love to eventually love to trust it on a big pipe to do it.

Update, using the factory h pipe and mid pipes to a gp style can in place of the factory muffler, with 3 inch velocity stacks jetting so far is 38 pilot, 3 turns out on air mix, and 4 shimms on needle and 128 mains (could probably lean it out a size). It runs smooth in the tn mountain air. Any one feel free to post what your running. Especially if your running some Kustom stuff. I.e. homemade y pipes if it took fighting jetting. Let's keep these little bikes running and having fun. Anyone in East TN hitting the Tail of the Dragon, dm me. Would like to get a group going.

Greg, glad to hear you're getting it dialed. I haven't had a ninjette in years or I would offer my own experience, but I may have an old build coming back to me from, of all places, east TN. I built a ex250 for my dad some time ago and now at 78 he said his reflexes are too slow to ride. I live in SoCal now and plan to ship the ninja out to ride the local canyons by my house.
I'm sure I will be playing with jetting to accommodate the elevation and arid climate out here in the high desert and coastal regions. It would be cool if I could line up a Tail of the Dragon run before it leaves TN but I doubt that's in the cards... ride safe!

Yea man, let me know! We'll make it happen, I know a few other good riding roads around thats not so crowded
