Welcome !!!

I would start by cleaning the air filter.

How do you drag race a 2010 Kawasaki Ninja 250R SE?

with a lot of patience

My local track will within reason let you racing anything as long as it is mechanically sound. we once had a guy race a 50cc pit bike, it was like watching paint dry when he ran.

First thing that always comes to mind with strange issues that pop up is fuel.

How old is the gas? What gas are you running? Is the engine stock except for the exhaust and jetting?

I was running 95 octane. I will admit I topped off the tank with some fuel from a jerry can that I filled up the previous day and something didn't seem right about it.it just seemed to smell off and a bit greasier than usual

Yes, I have just read your other thread:
https://www.ninjette.org/forums/show...65#post1020865

Could it be that one of the new jets has unscrewed itself due to vibrations?

I'd start there then.

Is 95 (RON?) the rating in the manual? Always run the lowest octane you can without detonating for the most power. I only go up in octane to get away from ethanol-blend. Not sure if that's an option for you.
