Legs (calves) cramping up

I went on about 90 mile ride today through TX hill country, and found that halfway through the run my legs start giving up.
I'm 5"10, size 10.5-11 boot.
If the footpeg is at the ball of the foot, my legs tire out pretty quick and go towards cramping up. If the peg is at the boot hell, it's comfy (from the knee down I think it's almost vertical then) but my toes hit the shifter and brake (and if I put them under the shifter and brake then it's awkward to get them out).
Would rearsets help in this situation?

Trying to stay relaxed. I think I got the arms down, but legs...to keep the feet on the pegs I have to put a little bit of pressure on them, and that's where I think the problem might be coming from.

I leave my feet in the "vee" in front of the heel, left foot with the toes just under the shifter, right foot just resting on the brake, not under it.

Never had a problem with tired calves.

I agree with stretching and drinking more water. Dehydration can do some funny things... Give you cramps, headaches, etc. Also try stretching before every ride. If that does not work maybe you need to see a doctor. It could be something more serious.

Are you wearing riding boots? I have foot and ankle cramps when I wear normal boots. Having a riding specific boot with a shank in it helps alleviate fatigue from vibrations and constant foot movements, for me at least. You can also try tonic water. Quinine helps me during hot weather riding when I'm sweating out 5 pounds between destinations.
