Race bodywork : taking off sidestand & getting into gear

Ok, so in fitting Armor Bodies I took off the sidestand and realized I now can't get into gear without the engine cutting out. How do I bypass the kick stand thingy?

put your side stand back on, and kick it up, then take it off.

Short the wires at the kick stand

If you're going full-time racebike, you can just short the wires. If you're planning on going back/forth, I'd suggest leaving the kickstand on and safety wiring it in the up position for trackdays/racing. Racing rules usually call for it to be removed, but at the amateur level, I'm willing to bet most tech guys will let you go with wiring it up if it's a dual-purpose bike.

PS there's no harm in cutting bodywork to make room for a kickstand if that's what it takes.
