Target fixation??? (Graphic warning)

Caused by target fixation in additional to using the brake (which stands the bike up and going wider)?

Yep. Watch your intended path, not the obstacle. I've run wide like that, but I managed to turn the bike back where it was supposed to be, and avoided getting hit. But I was fixated on the target.... not a good thing. It took some mental effort to look away from the thing the brain is screaming "DANGER!!!" about.

The wind totally blew him into that truck....

I believe it was a combination of things as it normally is.

He was distracted, trying to talk to the camera and was more focused on being goofy and giving narration than what he should be doing on the bike.

This led to piss poor entry into the turn, Most of the time this should not have mattered at his speed, he should have been able to put the bike on the correct path but...

Once he realized he was on a sh**** line he was content with it/to afraid to push on the bars any more and was going to ride it out figuring he would hug the double yellow. Then the truck appears from around the turn and enter the target fix.

He needed to make a quick, abrupt, evasive maneuver to avoid the contact, but didn't.

He was more focused on chatting to the camera than paying attention to what he was doing.

The bike was not even banked !!!
All he needed to do was pushing forward that right hand grip some.

Such early turn in. Maybe someone can educate me on the fluid dynamics, but I would think the large rocky obstruction to his right prior to the crash would've blocked or redirected any wind from that direction. He was well off course before clearing that obstruction.
