Same here... corned beef, cabbage, soda bread, and homemade stout. It was fairly authentic.

I used to do a bit of homebrewing back in Chicago/ Indiana. I never could get my dry Irish stout nailed just right; it's the low abv ones I found most difficult to get just so.

For stout, I've tried dozens of recipes, and for my taste, the simple ones are the best.

Haha, I never did. Back in Chicago, they dyed the river and all the Miller Lite they could find green for St Pat's.
My go-to beer has always been Guinness though. I could get close with a simple 70% 2row/20% oats/10% dark roast and charging the keg with a nitrogen/co2 blend. Mine always crept up to that 5 or 6% abv instead of the 4.2% target. Now that I don't drink much at all, I've been picking up Guinness Zero and that beer is darn near perfect. I actually prefer it to the regular Guinness with alcohol.

Now I realize why the wife grabbed a corned beef brisket and a head of cabbage !...... when we were at the store the other day.... I've always loved that .... I bet she was going to surprise me ! LOL
I've been too busy on the bike now that it quit snowing and raining so I probably missed Saint patties day too ! ... ooooh well
....
the closest I've ever got to home brewing was I bought a book....
looks like alot of work to me..... but a good brew is worth some work ! problem is I like a Malt brew and those recipe's are far and few between !
