I know this is a month-old thread, but U-Haul carries hitches for darn near every vehicle out there, whether you'd think it can tow or not. I did track days pulling my Bonneville behind a Prius and only had trouble going over a mountain pass. Cars usually end up with a hitch that can handle 200# tongue weight and 2000# towing weight. One of their bike trailers is easily under that if you stick your cooler/toolkit/stands at the rear of the trailer to balance the load. If it's a multi-day, get a box trailer, pull out the bike and set up a cot/air mattress in the trailer and camp at the track.

I've ridden to the track a few times and mooched for water/shade/tools and a ride home if I crashed. It's possible, but it's really not the greatest idea.
