I don't think there would be a whipping sound, but I don't know for sure.

Oh yea, the whips, for sure! If you can get close enough to the track. At HPR here in Colorado you can get REALLY close to the front straight and man, when those big bikes come blasting past it feels like a shotgun going off right next to you...

The "pop" you hear is from the vacuum behind the bike having compressed all the in front of it, and leaving very little behind it. So for an instant, there is not enough air between your ear drums and the exhaust to transmit the sound waves. You perceive this as a pop because there is so much sound and then no sound all of a sudden - much like visually we perceive movies as fluid motion because the frame rate is greater than our eyes' refresh rate. The key to either of these situations is our brain and its ability to interpolate stimuli. Thus, if your close enough to an object moving fast enough, you perceive it as a "pop" - I've experienced it with train as well - Ever stand 6" away from a passing train going 70mph? Right as the engine crosses in front of you there is absolute silence for 50ms or something, and then a massive rush of sound, and the experience is the greater! Now, please don't go and try it and end up getting by a train, that would suck, for all of us.... mmmkay?

Standing next to the pit wall at Miller when WSBK rider Johnny Rea was testing was a bit of a rush, literally and figuratively, sound wise. 170+ and accelerating to 190-ish - the bike and rider were making this unholy ripping through the air sound in addition to the engine wail as they ripped by. It can only be experienced in person. I couldn't find a video that duplicated that noise combination.
