Lower profile clipons
I'd like to mount clipons above the triple, and don't want to use riser type setup (like Woodcraft). Vortex seem to have a very low profile clamps, about 13mm-20mm ... is this the best option? Other versions floating around are as tall as 40mm with two bolts, no way I can slide the fork up that much.

the problem with those types of clipons is that they hit the bodywork on the side. so you either have to cut bodywork lower or run naked

Bodywork will be cut to fit, not a problem with race glass.
