If your tire guy can stretch it to fit, the answer is yes it will fit. However, the wider the tire the more pinched it will be on the same size rim. So generally, with a wider tire you will want a wider rim. The 88-07 pregen model used to come with a 120 width rear tire, but the factory shrugged that tire off for a 130 width tire at some point during its lifespan which year escapes my memory at the moment. The factory did not, however change the rim. That means the 130 width tire is already pinching it.

The 110 80 16 should fit the front, however it will gain 8 mm of ride height when compared to a 100 80 16. There are more sizes available in a 110 90 16, however you will need to raise your front fender in order to get the tire to fit.

I have a GT501 rear and a sport demon front and I like it. The sport demon rear did not work for me because I felt it slip on more than one occasion on a cold left hander from a stop light. Other people like the sport demon rear and it has quite a following. The GT501 is supposed to last longer than the sport demon rear, but with a slight drop in stickiness. Try both, flip a coin.

Now read the links that @Alex provided, your question about what else is out there will be answered within.
