Overheat!!
Ok, so I left the bike idling for about 8 minutes after a ride (stupid I know). When I came back to check on it, the fan was on and I noticed my temp light ON! What damage did I do to the bike? Am I f*****? It seems to be running fine right now.

As long as the radiator fluid did not boil over you should be fine. Check the radiator fluid level and check the oil to make sure it does not look or smell burnt.

I use distilled water as my coolant and because it is distilled water, I didn't smell anything burnt, and there's plenty of water left in reservoir.

Do you use water weter also or just distilled water?

Oh and when I noticed the light, I turned it off for like 8 seconds and it dawned on me that it needed more air to blow on the radiator fins so I started driving it. The light went away after about 15 seconds of driving.

Yes I think the bike should be ok. Watch for oil consumption. If the level starts going down that is a sign of thermal break down. If it starts using oil, change it and it should be ok with new oil.

A little water wetter will help a bit. It's pretty cool, the way it works is by lowering the surface tension of the water, so heat conducts better from the radiator surface to the water. Unlikely you did any real damage in 8 minutes.

Total and complete engine failure. I think you should give away the bike to a friend at a shockingly low price right away.
If everything is still running fine right now, the coolant level is still appropriate, the worst thing you may have done is taken some life out of the oil, and perhaps your next change should be a little early.
