you don't need to grind off the rivet head to press it out.

The limited times I've changed an OEM chain, I've found that grinding off the rivet head is the best way. Maybe I just don't have that much faith in my budget China chain breaker tool, whereas you've got a quality chain breaker.

cheap harbor freight chain breaker works well to remove the rivet without any grinding so long as you use the correct size pin. i believe harbor freight is the definition of cheap chinese tools.

Yep, but it's a "Heavy Duty" chain breaker according to them.
Comparing it to the Cycle Gear "Stockton" and Motion Pro chain tool sets which include riveting accessories, it is much beefier. I use the Harbor Freight Heavy Duty chain breaker for breaking and the more expensive Stockton set (still only $30) for riveting. I honestly wouldn't trust the Stockton set for breaking a chain without grinding but I don't have a grinder and I wasted hours trying to do it with a cheap rotary tool years ago so I'm not going down that path again! If I had a grinder I'd just cut the chain off entirely and not deal with pressing out pins.

If you aren't going to grind, get a disposable tool like the Harbor Freight one. It works great!
